General Notes:
1. Humidity and temperature strongly affect leavened foods such as breads, cakes, cookies, and doughnuts. When baking American recipes in Hamada, look for recipes from the southeastern U.S., where the climate is similar to West Japan.
2. For American recipes, temperatures are in Fahrenheit. They need to be converted to Celsius. Unless you get involved in wood-fired pizza or tandoori ovens, do not bake anything at 300+ C.
3. American and Imperial volume and weight measurements are also different from the metric system. Imperial measurements use the same words as American measurements, but are slightly larger. Therefore, British recipes often use the metric system for clarity. For American versus metric conversions, use this chart:
4. American measurements often rely on volume where metric measurements rely on mass or weight. Different ingredients have different density and therefore different conversion formulas. For example:

Breads & Bakery
Although many things are called bread, there are different ways to make bread rise (grow in size) before or during the baking process. Yeast breads use yeast to rise. This process takes at least 1 hour before baking. Cinnamon rolls and challah are yeast breads. Quick breads use baking soda or baking powder to rise. They can rise while baking. Biscuits and scones are quick breads. Flat breads use neither yeast nor baking soda. Therefore, they do not rise a lot. Tortillas and naan are flatbreads.
